خلاصه يا چکيده : ‭5 , 0, 30, 60, 90 and 120 by glucometer. The data was analyzed by the statistical software SPSS using repeated measured ANOVA test and Tukey Test. Results: The glycaemic index of Tarom rice equals to 76.8 (high glycaemic index) prepared by Dami method and 83.9 (high glycaemic index) prepared by the Safi method. So the glycaemic load of Tarom rice equals to 41.95 (high glycaemic load) prepared by Dami method while 43.97 (high glycaemic load) prepared by the Safi method. Discussion: Tarom rice has a high glycaemic index and load whatever cooked by Dami or filtering method and is recommended to be eaten less in patients with cardiovascular diseases, diabetes and people at risk of the kidneys and thyroid cancers. Keywords: Determine, Glycaemic Index, Tarom Rice -index meals, increases the risk of diabetes and cardiovascular diseases. Measurement of this indicator is possible for any kind of food. Half of the population of the world, including our country, are dependent on rice as a staple food. The aim of the present study is to determine the glycaemic index of Tarom rice (brand name of Fallah) in Mashhad. Methods: This experimental study was conducted in 10 healthy male volunteers with similar activities. After fasting for about 10 hours, three days apart (the first day 50 grams glucose powder,the second day Tarom rice cooking method Dami and the third day Tarom rice filter method) with 100 cc of water was given to them.
